Mighty Millet & Soil-Restoring Mushroom Rissotto Cups

This canapé highlights millet—a traditional grain native to Asia and Africa with the ability to thrive in dry conditions at high temperatures. It’s also nutrient-dense with a high protein content, making it compatible with plant-based diets. In this dish, it’s paired with mushrooms, which play a role in detoxifying degraded soils, as well as contributing to the overall health of regenerative ecosystems.

  1. Finely chop the onions, mince the garlic and slice the mushrooms.
  2. Add olive oil to a large skillet or pan and bring to medium high heat.
  3. Add onions and garlic and cook until translucent, about 3 minutes.
  4. Add millet and mushrooms and stir to coat with oil.
  5. Add in half of the stock. Stir all together.
  6. The millet will start to absorb the stock after 10 minutes. Once it does, add the other half into the pot. Continue cooking, stirring every couple of minutes, until the millet is almost all the way cooked through, around 17-20 min.
  7. When millet is cooked, reduce heat to low. Add coconut butter or cream and stir, then stir in the nutritional yeast.
  8. Spoon into small ramekins.
  9. Garnish with fresh herbs and sea salt/pepper to taste.

Plating & Serving

Recommendation to serve in a small ramekin with a coffee spoon or small fork. Alternative would be to serve on a tasting spoon.

Ingredients

  • Recipe yields canapés for approximately8-12 people
  • 1tbsp olive oil
  • 1–2 tbsp coconut butter or cream
  • 1 spring onion or 1/2 small white onion
  • 2 garlic cloves, minced (about 1 tsp)
  • Around 200g or 1.25 cups mushrooms of choice
  • 130g or 1 cup hulled millet
  • 500 ml or 2–3 cups vegetable stock
  • 30g or 1/4 cup nutritional yeast flakes
  • Fresh herbs
  • Sea salt and black pepper

Millet is widely available. Recommendation to use local and/or foraged mushrooms when available

In this case, the root is brewed into an espresso-like coffee, given coffee trees are struggling to grow amid rapidly changing conditions in the jungles lining the equator. The coffee is paired with agroforestry-grown chocolate, which is helping to restore degraded jungles.
